A degreaser breaks down fat, oil and carbon build-up – it removes contamination. A sanitiser kills bacteria and pathogens on a surface that’s already clean. In practice, you use both in sequence: degrease first to strip the grease, then sanitise to bring the surface up to food-safe hygiene standard. Sanitiser applied straight onto a greasy surface won’t work properly.
