The castors need to handle kitchen grout lines and level changes. Look for polyurethane wheels, not rubber. Rubber picks up grease and shreds.

Load rating matters. A 150kg trolley loaded with 180kg of stock tips. That’s a full batch in the bin and a staff member off with a back injury. Racking needs to be 304 stainless, not 430. 430 rusts at the welds within six months of steam exposure.
